Make your own ricotta cheese

HOMEMADE RICOTTA: You can make your own ricotta cheese. This recipe makes 2 cups.

Ricotta

1 gallon whole milk
1/4 cup lemon juice
kosher salt

Over medium heat, warm the milk and lemon juice in a stainless-steel pot until the curds separate. Line a colander with a few layers of cheesecloth. Ladle the mixture onto the cheesecloth. Using twine, tie the cheesecloth around the cheese. Attach the twine to a wooden-spoon handle. Rest the spoon with the cheesecloth hanging over a deep bowl or attach to kitchen faucet. Let hang for 3 hours. Remove from cheesecloth, and season with salt. Store in an airtight container in the refrigerator for up to 3 days. — Rhonda, forums

Are the differences in how pans heat and release really significant? Would I improve the odds of getting my favorite potato galette to slip intact from the pan if I used something other than my usual stainless-coated aluminum?

To find out, I experimented for a few days with a dozen or so different pans, some old and some new. I learned that metals and surfaces do matter, but so do fat and heat management.

The prices ranged from $25 for the new aluminum nonsticks to as much as $480 for French copper.

First I wanted to see what difference the kind of metal makes in how the pans heat up. Copper conducts heat twice as fast as aluminum, and five times faster than cast iron. But the copper and iron pans each weigh more than five pounds, while the thinnest aluminum pan weighs barely two. Is lots of expensive copper better than a little cheap aluminum?

1. In a small bowl, dissolve the yeast in the warm water. Add the honey and let sit for 5 minutes, until foamy.

2. Put the flour in a food processor fitted with the stainless-steel blade. Mix the 1 cup cool water with the olive oil and salt. With the motor running, pour the olive oil mixture and the yeast slowly in through the feed tube. Process until the dough forms a ball that rides around on the blade.

3. Transfer the dough to an oiled bowl, cover with plastic wrap, and let rise until double in bulk. Punch down the dough and knead it on a lightly floured surface for 1 minute. Divide the dough into 4 equal portions and roll them into tight balls. Place on a tray, cover with a damp towel, and let rest for several hours or overnight in the refrigerator before use.

4. Roll or stretch each ball of dough into a 7-to-8-inch circle. Place the circles, one at a time, on a wooden peel or on a baking sheet and build the pizza as desired.

For strength, stainless steel is also used in this bracelet. The bracelet is finished off with a beautiful stainless steel lobster clasp.

The total length of the bracelet, including the clasp is just a bit under 8" (20 cm) long. I would be more than happy to adjust the length of the bracelet. In order to keep the colour sequence intact, each adjustment would be in 1" intervals. Or, if not worried about colour sequence at the end of the bracelet, I can adjust it to just about any length. Please let me know if you require an adjustment to the length.

Safer products and uses: When possible it is best to avoid #7 plastics, especially for children's food. Plastics with the recycling labels #1, #2 and #4 on the bottom are safer choices and do not contain BPA. Find baby bottles in glass versions, or those made from the safer plastics including polyamine, polypropylene and polyethylene. Soft or cloudy-colored plastic does not contain BPA. Bottles used to pump and store expressed breast milk by the brand Medela are also labeled BPA-free.

Many metal water bottles are lined with a plastic coating that contains BPA. Look for stainless steel bottles that do not have a plastic liner.

While the levels of BPA that leach from hard plastics is generally low, we recommend avoiding use of plastic containers to heat food in microwaves. Ceramic, glass, and other microwaveable dishware are good alternatives. Avoid using old and scratched plastic bottles.
