I bake the bread using the original recipe method, in an oven-proof bowl, with a lid on top.  The other day I was in a hurry, so after the initial rise and shaping the dough into a loaf, I plopped it into the cold bowl, and put it in a cold oven (no preheating).  Then I turned the oven to 450 degrees, baked the bread for 30 minutes with the lid on and 30 minutes with the lid off.  The bread was fantastic.  The crust was crispy on the outside, and the inside was delicious.&lt;/P&gt;
&lt;P&gt;“The next day I tried this with dough that was refrigerated overnight.  No extra rising, I just sprinkled the dough with flour, shaped a quick round loaf, and plopped it in the cold baking dish, and baked it.  It was great! How many novices it attracted to bread baking is anyone’s guess. But certainly there were plenty of existing bread bakers who excitedly tried it, liked it and immediately set about trying to improve it. &lt;/P&gt;&lt;/div&gt;&lt;/div&gt;&lt;hr size="2" color="#666666" /&gt;&lt;div style="padding: 10px;"&gt;&lt;div style="text-align:left;"&gt;&lt;P&gt;I was among them. I wondered how the recipe of Mr. Lahey, who owns the Sullivan Street Bakery, could be made faster (it calls for 14 to 20 hours’ rising time) and with a higher percentage of whole grain. &lt;/P&gt;&lt;/div&gt;&lt;/div&gt;&lt;hr size="2" color="#666666" /&gt;&lt;div style="padding: 10px;"&gt;&lt;div style="text-align:left;"&gt;Changing the profile of the bread’s ingredients proved to be a real challenge.&lt;/div&gt;&lt;/div&gt;&lt;hr size="2" color="#666666" /&gt;&lt;div style="padding: 10px;"&gt;&lt;div style="text-align:left;"&gt;&lt;P&gt;I have not shown the whole grain bread to Mr. Lahey, who, in fairness, has been encouraging. &lt;/P&gt;&lt;/div&gt;&lt;/div&gt;&lt;hr size="2" color="#666666" /&gt;&lt;div style="padding: 10px;"&gt;&lt;div style="text-align:left;"&gt;&lt;P&gt;It is likely that when he gets around to producing a whole grain loaf, it’ll be better than mine. Reserve 1 cup mixture; press remaining mixture onto bottom of prepared pan. Stir jelly to soften, and spread evenly over crust. Sprinkle 1 cup peanut-butter chips over jelly. Stir remaining 2/3 cup chips into reserved crumb mixture; sprinkle over top. Bake 25 to 30 minutes or until lightly browned. Cool. Let hang for 3 hours. Remove from cheesecloth, and season with salt. Adapted from a Dos Caminos demonstration recipe, but similar to many found in their awesome book, &lt;A href="http://www.amazon.com/Mod-Mex-Cooking-Vibrant-Flavors/dp/0740768654/ref=smitten-20"&gt;ModMex&lt;/A&gt;&lt;/P&gt;
&lt;P&gt;The secret to getting your quesadillas crisp, Lindquist insisted, is to cook them in either butter or lard, and no skimping. A griddle is best if you have one, but a regular old frying pan will do in a pinch.&lt;/P&gt;
&lt;P&gt;1 small/medium acorn squash&lt;BR /&gt;
4 tablespoons vegetable oil&lt;BR /&gt;
3 tablespoons diced white onion&lt;BR /&gt;
1 tablespoon minced jalapeno&lt;BR /&gt;
1 clove garlic, minced&lt;BR /&gt;
2 poblano chiles, roasted, peeled and cut into strips&lt;BR /&gt;
Salt and pepper to taste&lt;BR /&gt;
10-inch flour tortillas&lt;BR /&gt;
1 cup shredded Mexican cheese blend of your choice (I used Muenster, not Mexican but worked great!)&lt;BR /&gt;
Butter for frying quesadillas&lt;BR /&gt;
