&lt;BR /&gt;2 C. all-purpose flour
&lt;BR /&gt;1 Tsp baking powder
&lt;BR /&gt;1 Tsp baking soda
&lt;BR /&gt;1 Tsp cinnamon
&lt;BR /&gt;1/2 Tsp salt
&lt;BR /&gt;2 C. baking apples, peeled, chopped
&lt;BR /&gt;1/2 C. pecans or walnuts&lt;/P&gt;&lt;/div&gt;&lt;/div&gt;&lt;hr size="2" color="#666666" /&gt;&lt;div style="padding: 10px;"&gt;&lt;div style="text-align:left;"&gt;&lt;P&gt;&lt;DIV&gt;In large mixing bowl cream butter, sugar, eggs and vanilla with electric mixer. Combine dry ingredients and add to butter mixture. Mix until flour is moistened. Fold in apples and nuts. Spread in a greased 9x9 inch baking pan. So simple to make you don't even need to get the electric mixer dirty.&lt;/DIV&gt;&lt;BR /&gt;&lt;SPAN&gt;Melt-and-Mix Chocolate Coconut Cake&lt;/SPAN&gt;&lt;BR /&gt;&lt;DIV&gt;&lt;SPAN&gt;By Donna Hay&lt;/SPAN&gt;&lt;/DIV&gt;&lt;BR /&gt;250g butter, melted&lt;BR /&gt;3/4 sifted cocoa powder&lt;BR /&gt;1 1/3 caster sugar&lt;BR /&gt;3 eggs&lt;BR /&gt;1.5 cups desiccated coconut&lt;BR /&gt;1.5 cups plain flour&lt;BR /&gt;1.5 teaspoons baking powder&lt;BR /&gt;&lt;DIV&gt;3/4 cup milk&lt;/DIV&gt;&lt;BR /&gt;1. Preheat the oven to 180&lt;/SPAN&gt;&lt;SPAN&gt;°C (350&lt;/SPAN&gt;&lt;SPAN&gt;°F).&lt;BR /&gt;2. Place all ingredients in a bowl and whisk until smooth.&lt;BR /&gt;3. Add boiling water; stir until gelatin is completely dissolved and mixture is clear. 1 teaspoon vanilla&lt;BR /&gt;
1 Tbsp espresso or strong coffee (optional)&lt;BR /&gt;
1 teaspoon baking soda&lt;BR /&gt;
Pinch of salt&lt;BR /&gt;
1 1/2 cup of flour&lt;BR /&gt;
1 cup chopped walnuts (toasted or raw)&lt;/P&gt;

									&lt;P&gt;No need for a mixer with this recipe. &lt;/P&gt;

&lt;P&gt;&lt;B&gt;1&lt;/B&gt; Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. &lt;/P&gt;

&lt;P&gt;&lt;B&gt;2&lt;/B&gt; Mix in the sugar, egg, espresso and vanilla. &lt;/P&gt;

&lt;P&gt;&lt;B&gt;3&lt;/B&gt; Sprinkle the baking soda and salt over the mixture and mix in. &lt;/P&gt;

&lt;P&gt;&lt;B&gt;4&lt;/B&gt; Add the flour, mix until it is just incorporated.  Fold in the chopped walnuts. &lt;/P&gt;

&lt;P&gt;&lt;B&gt;5&lt;/B&gt; Pour mixture into a prepared muffin tin. Bake for 25-30 minutes.  Check for doneness with a toothpick inserted into the center of a muffin.  If it comes out clean, it's done. Cool on a rack. &lt;/P&gt;
