   2 1/2 cups flour sifted&lt;BR /&gt;
   1 teaspoon cinnamon ground&lt;BR /&gt;
   1/2 teaspoon baking soda&lt;BR /&gt;
   1/4 teaspoon salt&lt;BR /&gt;
   1 cup sugar&lt;BR /&gt;
   1/2 cup butter or margarine, softened&lt;BR /&gt;
   1/4 cup molasses&lt;BR /&gt;
   1 egg large&lt;BR /&gt;
   Filling&lt;BR /&gt;
   1/2 cup sugar&lt;BR /&gt;
   2 eggs large, slightly beaten&lt;BR /&gt;
   1 tablespoon lemon peels grated&lt;BR /&gt;
   1/4 cup lemon juice&lt;BR /&gt;
   1 tablespoon butter or margarine&lt;BR /&gt;
   1/8 teaspoon salt&lt;BR /&gt;
   1 cup coconut flaked&lt;BR /&gt;

						1.  To make cookies, sift together flour, cinnamon, baking soda, and salt. Beat sugar and butter in a large bowl with electric mixer until fluffy. Beat in molasses and egg. On low speed, gradually beat in flour mixture. Chill 3 hours or overnight.&lt;/DIV&gt;

2.  To make filling, cook and stir sugar, eggs, lemon rind, lemon juice, butter, and salt until thick. Remove from heat. Stir in coconut. Cool.&lt;/DIV&gt;
&lt;BR /&gt;&lt;DIV&gt;
3.  Heat oven to 350°. Have baking sheets ready.&lt;/DIV&gt;
&lt;BR /&gt;&lt;DIV&gt;
4.  Divide dough into four equal portions. Roll one portion at a time into a 15 x 2 1/2 -inch strip. Spread one-fourth of the filling on one half of each strip (7 1/2 x 2 1/2 inches), spreading to within 1/4 inch of edges. Fold dough over filling. Seal edges. Cut into 1 1/2 -inch bars. Place on baking sheets. Bake 12 to 15 minutes. Cool on wire racks.&lt;/DIV&gt;

Add flour and baking soda. Shape into 48 balls 91/2 inch). Optionally roll balls in 3 tablespoons sugar. Place on cookie sheet and bake 8 to 10 minutes in 350 degree oven. After removing from oven, immediately place chocolate kiss in the center of each cookie.
