eloise was a strong-willed and gifted woman who was fluent in Latin, Greek and Hebrew, and came from a lower social standing than Abelard. At age 19, and living under her uncle Fulbert's roof, Heloise fell in love with Abelard, who she was studying under. Not only did they have a clandestine affair of a sexual nature, they had a child, Astrolabe, out of wedlock. Discovered by the Fulbert (who was a Church official), Abelard was assaulted by a hired thug and castrated, and Heloise entered a convent. Abelard was exiled to Brittany, where he lived as monk. Eventually Heloise became abbess of the Oratory of the Paraclete, an abbey which Abelard had founded.

It was at this time that they exchanged their famous letters, presented in this book. The letters, originally written in Latin, are passionate both in the remembrance of lost love, and the attempt to reconcile that love with their respective monastic duty to remain chaste

The cook notes that "chopping all the ingredients by hand and not blending them is key because this prevents the ingredients from becoming a completely homogenized emulsion or paste. When you dress a pasta with a pesto that has been hand chopped the miniscule flecks of basil will separate from the olive oil in places, you get definition between ingredients, and bright flavors pop in a way they don't when they've been blended into one".

I've never used a mezzaluna, but reading this account of pesto-making has inspired me to get one!

1 large bunch of basil, leaves only, washed and dried
3 medium cloves of garlic
one small handful of raw pine nuts
roughly 3/4 cup Parmesan, loosely packed and FRESHLY GRATED
A few tablespoons of extra-virgin olive oil

Start chopping the garlic along with about 1/3 of the basil leaves. Once this is loosely chopped add more basil, chop some more, add the rest of the basil, chop some more. I scrape and chop, gather and chop. At this point the basil and garlic should be a very fine mince. Add about half the pine nuts, chop. Add the rest of the pine nuts, chop. Add half of the Parmesan, chop. Add the rest of the Parmesan, and chop. In the end you want a chop so fine that you can press all the ingredients into a basil "cake" - see the photo up above. Transfer the pesto "cake" to a small bowl (not much bigger than the cake). Cover with a bit of olive oil, it doesn't take much, just a few tablespoons.

Just before serving give the pesto a quick stir to incorporate some of the oil into the basil.

Stop watching television.

Stop eating fast food.

Stop eating pizza and fried foods.

Stop driving places that you could easily walk to.

Read at least 1 book a month.

Take classes in what interests you or your vocation.

Work enough to support yourself, and if needed get a new job or second job to make enough to support yourself. Never stick with a job that doesn't pay enough to support yourself no matter how much you work.

Pay off your debts and don't go in debt. You can pay off your debts if you avoid needless expenses, such as cable, overpriced clothes, impractical decorations, unhealthy snacks, jewelry, etcetera.

Don't buy a car on finance, and don't buy an expensive car if a cheaper one that works is available.

Drink alcohol less or quit.

Do drugs less or quit.
