Vegan Pumpkin Streusel Cheesecake

clipper's remarks: Spoon silken tofu into sieve and cover with a small plate. Add a weight or heavy can to top of plate. Cover loosely with plastic wrap and let stand 30 minutes; drain off liquid.

Place drained tofu into a food processor or blender. Add cream cheese and remaining ingredients and puree until smooth. Spoon tofu mixture into crust-lined springform pan and bake at 325 degrees for 70 minutes. Sprinkle remaining crumb mixture evenly over top of cheesecake and turn off oven.
Cool cheesecake in closed oven for 75 minutes. Remove cheesecake from oven and run a knife between the pan and the cake before removing the top part of the pan.
Cool to room temperature. Cover and chill for eight hours or overnight.
Cut into 12 wedges and serve.

1/8 teaspoon salt

Preheat oven to 325 degrees.

clipper's remarks: 3. Roll dough into 3/4-inch balls. Place close together on baking sheets. Make a little dent in the top of each ball and fill them with 1/2 teaspoon (or less) of the jam. Bake for 15 minutes or until slightly brown. Do not over bake. Cool on a wire rack.

Variation: You can replace 1/4 cup of the oil with 1/2 cup of peanut butter (applesause could likely be substituted also)

This recipe for thumbprint cookies comes from the Tassajara Zen Mountain Center, the legendary Buddhist monastery in California. And I’ll say this, those monks make some mean cookies. Actually, since they are vegan, I guess they’d be more properly classified as kind. All I know is that they are as wholesome and healthy as they are delicious, a bit of a Buddhist miracle.

INGREDIENTS
1 cup unbleached flour
2 cups almonds, ground
4 cups baby rolled oats
1/2 teaspoon salt
1 cup maple syrup
1 cup canola or vegetable oil
1/2 cup jam, thinned with water

1. Preheat oven to 350 degrees. In a medium-sized bowl, combine the flour, almonds, oats, and salt

2. In another bowl, mix together the syrup and oil. Add to the dry ingredients using your hands to mix well. Let dough stand for 15 minutes before using

While green beans are typically referred to as string beans, many varieties no longer actually feature the fibrous 'string' that runs down the length of the earlier varieties. Green beans are also commonly known as snap beans. Haricots verts are French green beans that are very thin and very tender.

Green beans are in the same family as shell beans, such as pinto beans, black beans and kidney beans. Yet unlike their cousins, green beans' entire bean, pod and seed, can be eaten.

Just prior to using the green beans, wash them under running water. Remove both ends of the beans by either snapping them off or cutting them with a knife.

Green beans are a classic ingredient in Salad Nicoise, a French cold salad dish that combines steamed green beans with tuna fish and potatoes.

Healthy sauté green beans with shiitake mushrooms.

Roast green beans, red peppers and garlic, and combine with olive oil and seasonings to make a delicious salad.

A mysterious light display appearing over Norway last night has left thousands of residents in the north of the country baffled.

The phenomenon began when what appeared to be a blue light seemed to soar up from behind a mountain. It stopped mid-air, then began to circulate.

Curious: A blue-green beam of light was reported to have come shooting out the centre of the spiral

Within seconds a giant spiral had covered the entire sky. Then a green-blue beam of light shot out from its centre - lasting for ten to twelve minutes before disappearing completely.

The Norwegian Meteorological Institute was flooded with telephone calls after the light storm - which astronomers have said did not appear to have been connected to the aurora, or Northern Lights, so common in that area of the world.

Fred Hansen, from Bø in Vesterålen, described the sight as 'like a big fireball that went around, with a great light around it again.'

'It spun and exploded in the sky,' Totto Eriksen from Tromsø told VG Nett.
